2007 Viognier Prestige
PHILOSOPHY
The Haan philosophy of producing the finest examples of super premium Barossa table wines is clearly expressed in excellence and limited production of the seven wines made from the estate-grown grapes.
Where possible, the opportunity to develop new styles from lesser known varieties such as Viognier is approached with great dedication and care. In this way the consumer is assured of great wines of excellence, quality and interest.
VINEYARD
The Viognier vines are 14 years old, grown on sandy loam with a 2 metre clay base. The vines are on a single wire trellis with two foliage wires, but are allowed to over-hang to protect most of the fruit from sunlight exposure. The 2007 Viognier only cropped at 2 tonnes to the acre, and due to frosts and drought only 3.5 tonnes of Viognier were available to be made into wine.
The philosophy of "great wine is made from great grapes" is the truth behind this wine. Never before, as far as we can tell, has such a system of selecting only the inner canopy grapes for the winemaking been carried out. This attention to detail ensures maximum expression of varietal character.
WINEMAKING
Viognier retains its green colour when it is not exposed to sunlight. This wine is made only from berries which exhibit this character. Hand selected and whole bunch pressed, the juice shows crispness and fresh floral aromas. Extraction rates are very low with an average of only 450 litres per tonne. Fermentation is maintained at 14-16°C, and is completed in two weeks. The wine is then allowed to rest on yeast lees for four months with stirring occurring on a two weekly basis.
THE WINE
This wine exhibits a very elegant form of Viognier, with strong apricot and honeysuckle aromas. The influence of barrel aging is evident with a complex smokey lift. The Viognier fruit is upfront and generous, with lashings of pear and quince-like fruit flavours. This intensity is maintained throughout the palate, finishing with soft mineral-like acidity. The structure and style of the wine allows it to be enjoyed now, but with bottle age will develop complexity and character.

Bottled under screw cap to give reward of varietal exactitude and lengthen the life and freshness of the Viognier. In 750ml bottles in cartons of one dozen per carton. Only 180 dozen made.
